  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, chopped
  • 1 Zest of lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat your oven to 425°F (220°C). Position the rack in the lower third of the oven.
  • Create the herb butter by combining. softened butter with minced garlic, chopped herbs, lemon zest, salt, and pepper. Mix until well combined.
  • Prepare the chicken by removing the giblets and patting. it is thoroughly dry with paper towels. A dry chicken ensures crispy skin.
  • Gently separate the skin from the breast meat using your fingers, being careful not to tear it. Spread half of the herb butter mixture under the skin, massaging it to distribute evenly.
